Zlata Dairy is a multi-award-winning Istrian cheese factory that produces quality Istrian cheeses according to the traditional recipe.
Taste various types of local cow’s milk, sheep’s milk and mixed milk cheese; škripavac or the farmer’s cheese, hard and semi-hard cheese, grated cheese and other dairy products like cottage cheese, plain yogurt and yogurt with probiotics. There is also homemade cheese with truffles, a favourite Istrian specialty.
Cow’s milk cheese from Istrian pastures
Our herds enjoy grazing on luscious Istrian pastures, and their diet is completely adapted to cheese production.
The star cheese in our offer is hard cow’s milk cheese, which, depending on the length of maturation, varies from mild and creamy to a spicier, more intense taste and texture. Our small dairy factory is also known for its fresh cheeses, the traditional Istrian škripavac and young cheese, as well as homemade cottage cheese, fresh cheese with cream and natural yogurts.
Istrian Sheep’s Milk Cheese
At Zlata Dairy, Istrian sheep’s cheese is made according to a traditional recipe, differing from cow’s milk cheese in its stronger aroma and more intense taste. We make sheep’s milk cheese using locally sourced Istrian sheep’s milk. Our cheeses are great as appetizers and snacks without additives or served with Istrian prosciutto, traditionally paired with red wine.
Besides cow’s and sheep’s milk cheese, we also make cheese using the perfect ratio of cow’s and sheep’s milk with a balanced, harmonious taste. The mixed Istrian cheese thus delights even those who are otherwise sceptical of the typically intense flavour of sheep’s milk cheese.

You can find us at virtually every fair throughout Istria, where you can taste and buy our cheeses. Visit us daily from 7 am to 8 pm at our farm estate in Čepić Polje or at the main market in Pula and Labin.
